This dish is so easy. You will love cleaning out your fridge of Veggies. First, cut a sweet potato into fries (no need to peel). Put them in a baggie and toss with seasoning. I use onion soup mix, and a few spritzers of olive oil. You can use herbs, salts , soup seasonings, any flavors you like. Preheat the oven to 425 , spray a sheet pan with pam, and release the sweet potatos. Put in the oven for 20 min , then use a metal spatula to flip them gently. Now set the timer another 20 minutes. Now that is done. ( pour a glass of wine and soak in the smells ).
Get your ingredients ready for the eggs. Scramble the eggs in a small bowl with a dash of milk and 1/4 tsp of salt. Chop up all the veggies you like in your eggs. Saute kale or spinach in a medium pan with a dash of salt till wilted. Pour in the egg mixture keep it moving. I add a bit of garlic but you can leave that out. YOU ARE DONE !!!!! I added shiracha sauce. WEEEEEEEYOW.
