HEAVY SKILLET VEGGIES

YOU WILL LOVE THESE!!!!   SO FULL OF FLAVOR.   Start with a heavy skillet.  Preheat the oven to 400.   Chop up all your favorite veggies.   I used yellow squash , zucchini, red and green pepper and mushrooms.   I first sautéed garlic in a bit of oil for 5 minutes.   You can add your favorite herbs too.  Throw in the veggies chopped in even sizes.   Keep on the stove for about 10 minutes stirring frequently.   Then transfer your oven safe skillet into the oven to finish for 10-15 more minutes.

This is a strong base for so many other dishes.  Keep these in the fridge and toss into your omelette, serve along side your main dish or as a main dish.   You will find me using this in so many other recipes.    Of course , you can pour a nice Shiraz while they are cooking and the kids are sitting quietly at the table , they set,  waiting.   : )
