VEGETABLE BAKED FRITATTA
So, if you have read my recipe for roasted vegetables, you can adapt them for this one. Here, I used Mushrooms, zucchini, squash, and red pepper. I also used my cast iron skillet that really creates such great flavor and gives me the option to finish in the oven. Preheat your oven to 350. Saute the veggies after tossing with salt and olive oil, for about 8 minutes, or until the firmness is how you like it. Blend together 6 eggs and pour on top of the veggies sprinkle with salt. You could add shredded cheese at this point. Let the bottom set, about 3 minutes and then transfer to the oven and bake until top browns. Set timer for 20 minutes and keep checking for doneness. Voila’ . WINE TIME !!!
