I just love a good Roasted Squash. Or maybe, I just like saying squaaaassssh. Yup , that’s it. Anyway try this:
Pour a glass of wine. What? Of course, that is step one. Anyway, Cut your squash in half. Place it face up on a sheet pan in a 425 degree oven for 30-50 min. Depending on how “squashy” you like it.
At this time you can also roast your other veggies, I used broccoli, and cauliflower. I also roasted the seeds from the squash. (Just salt them and add for 10 min. Toss the vegetables with salt and olive oil and throw onto same pan after squash has been in for 10 minutes. Take it all out , fill the squash with roasted veggies, add seeds and nuts , and ( I added goat cheese ) Drizzle with a balsamic glaze. You can buy these already made or make your own. So filling , sooo good.
