This is so easy!!! Grab your kids and 8 eggs. Yes, I said, “kids and eggs”. Turn that oven to 450 , chop your favorite veggies and toss in olive oil and salt. Roast for 15 to 20 min. Meanwhile, mix 8 eggs, 1/2 cup of your favorite milk and a sprinkle of salt. When veggies are done to your liking, remove from the oven and turn it to 350. Heat some garlic and a splash of oil in your cast iron , then throw in your roasted veggies.
Let them crisp a bit and then pour your egg mixture in. When you see the edges start to set, transfer to the oven for 10-12 min. Breakfast, lunch or dinner. Full of nutrients and protein. GO FOR IT!!!
